- Add the ghee, salt, and sugar in a stand mixer and mix until light and fluffy.

Then, while mixing, add the egg yolks. Scrape down sides of the bowl. Then add the vanilla extract.

Pour in the flour mixture and mix until incorporated.

Roll the dough into a log. Wrap it in parchment paper or plastic, then let chill it in the refrigerator for an hour.

Once the dough is ready, sprinkle sanding sugar on a clean surface and roll the dough in the sugar.

Cut the dough into slices.

Place the cookies on a baking sheet with parchment paper and bake at 350F for 10 - 12 minutes.
