Coconut Nectar Glazed Donuts

Donuts

  1. Preheat oven to 350° F. 
  2. Grease a donut pan with ghee. If you don't have a donut pan, you can use a muffin tin instead.
  3. In a large mixing bowl, whisk together eggs, brown sugar, coconut nectar, milk, melted ghee, and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, ground cinnamon, and pink salt. Gradually add the dry mixture to the wet mixture, stirring until a smooth batter forms. 
  5. Spoon the batter into the donut pan, filling each cavity about 2/3 full.
  6. Place the donut pan in the oven and bake for 12 to 13 minutes, or until the donuts are lightly golden and a toothpick inserted into the center of a donut comes out clean.
  7. Remove the pan from the oven and place the donuts on a cooling rack for 5 minutes.

Glaze

  1. While the donuts are cooling, prepare the glaze. In a small saucepan over medium heat, melt 1/4 cup of ghee.
  2. Once the ghee has melted, remove it from the heat and whisk in powdered sugar, organic coconut nectar, and vanilla extract until the glaze is smooth and well combined.
  3. Dip each cooled donut in the glaze, allowing any excess glaze to drip off. Place the glazed donuts back on the wire rack to set for a few minutes.
