Ingredients For the salad 4 corn cobs (about 3-4 cups) 1 cup cherry tomatoes halved or quartered ⅓ of a small red onion chopped 2 tbsp cilantro chopped 3-4 limes juiced 1-2 avocados diced 1-2 cucumbers Kevala Himalayan Pink Salt to taste Black pepper to taste For the dip ½ cup Kevala Organic Sesame Tahini 2-3 cloves garlic 4 tbsp Kevala Organic Olive Oil ⅓ cup parmesan cheese grated Kevala Organic Black Toasted Sesame Seeds to taste Kevala Himayalan Pink Salt to taste Black pepper to taste Instructions In a small bowl, whisk together tahini, garlic, olive oil, salt, pepper, and parmesan cheese until smooth. In a large mixing bowl, combine the corn kernels, tomatoes, onion, cilantro, cucumber, and lime juice. Top each portion with diced avocado. Add the tahini dip to the salad mix and top with black toasted sesame seeds. Season with salt and pepper, then taste and adjust the seasoning as needed. Enjoy!
