Cucumber and Cherry Tomatoes Salad with Tahini and Cheese Dip

Ingredients

For the salad

  • 4 corn cobs (about 3-4 cups)
  • 1 cup cherry tomatoes halved or quartered
  • ⅓ of a small red onion chopped
  • 2 tbsp cilantro chopped 
  • 3-4 limes juiced 
  • 1-2 avocados diced
  • 1-2 cucumbers
  • Kevala Himalayan Pink Salt to taste
  • Black pepper to taste

For the dip

Instructions

  1. In a small bowl, whisk together tahini, garlic, olive oil, salt, pepper, and parmesan cheese until smooth.
  2. In a large mixing bowl, combine the corn kernels, tomatoes, onion, cilantro, cucumber, and lime juice. Top each portion with diced avocado.
  3. Add the tahini dip to the salad mix and top with black toasted sesame seeds.
  4. Season with salt and pepper, then taste and adjust the seasoning as needed.
