Add eggs, oil, and honey into a bowl and mix. In a second bowl, mix flour, both sugars, baking powder, baking soda, salt, cinnamon and nutmeg.
Add the wet ingredients slowly into the dry ingredients while whisking. Then, once the mixes start to combine, change to a rubber spatula to mix the dough
Once the dough is combined, refrigerate for 30 minutes and preheat the oven to 350ºF. Make sure to have racks positioned in the middle and top half of the oven
Prepare two baking sheets with parchment paper. Once the dough has thickened enough, scoop your cookies with 1 tbsp measure. Roll your cookies into balls and place them on the baking sheets. Make sure they are separated enough.
Bake the cookies for 7-9 minutes, rotating the pans halfway through
One they’re done, carefully take them out and let them cool for a few minutes.
