Boil lightly salted water in a big bowl and cook the macaroni for 10 minutes.
At the same time, add the ghee in a saucepan and melt it over medium heat. Once melted add the flour, salt, and black pepper and stir for 5 minutes or until smooth.
Pour in the milk, while stirring continuously and cook it until the mix is smooth then add the nutritional yeast and stir until melted.
Drain the macaroni, add it to the mix and fold until coated.
Cut jack o lantern shapes into the peppers.
Slice the tops of the peppers off and remove out the seeds. Fill the peppers with the macaroni and top with more nutritional yeast
Bake for about 10-15 minutes until the nutritional yeast is melted and the peppers have roasted and softened.
