Preheat oven to 325° and have ready two sheets with parchment paper.a
Add ghee, sugar, the baking soda, cream of tartar and salt in a large bowl and mix until combined. Then add in date syrup, egg yolks and vanilla and mix. Finally, Mix in flour until combined.
Make 1-inch dough balls. Roll them in sugar and place them on the prepared cookie sheets.
Bake from 10 to 12 minutes.
Let them cool on the sheets for 2 minutes.
Remove, and let cool completely.
Once cooled down, add any ice cream of preference and prepare ice cream sandwiches,
