7 ounces of cooked or canned chickpeas, drained and rinsed
2 garlic cloves, crushed
4 Tbsp lemon juice
4 Tbsp Kevala Organic Tahini
2 1/2 Tbsp Kevala Extra Virgin Olive Oil, plus extra for garnish
1 tsp ground cumin
salt and fresh ground pepper to taste
paprika and sesame seeds for garnish
Now the secret to a smooth hummus is to remove the thin white skin from the chickpeas. It is a bit time consuming but truly worth it. Not only does it create a beautiful texture, it also helps the digestion process.
In a food processor, blend the chickpeas until they turn into a smooth paste. Add garlic, lemon juice, and tahini, process until smooth. With the machine running, gradually add the olive oil through the feeder tube. Add the cumin and mix until combined.
Season with salt and pepper to taste and serve with sprinkled sesame seeds and paprika on top.
